TikTok Pesto Eggs Are The New Viral Baked Feta Pasta

Forget green eggs and ham, this is a ​hell ​of a lot fancier.

You might not have heard of green eggs since you were reading Dr Seuss back in the day, but it turns out the unconventional breakfast dish is having a resurgence on TikTok.

Essentially fried eggs with pesto as a base, the tasty recipe tweak is the perfect way to add a bit of excitement to your bog standard eggs on toast.

Originally shared on TikTok by user Amy Wilichowski, the recipe has now been copied by hundreds all over the web, who have gone on to customise it so it suits their palettes.

You can make the dish as cheesy and packed with greens as you like, depending on your pesto of choice. Plus, you can even experiment with red pesto or vegan pesto if you fancy.

To make the recipe, all you have to do is add a tablespoon of your desired pesto into the pan, and spread it around (no need to add oil as well, as long as your pesto is oil based).

Then, simply fry your eggs as normal in the pan and they pick up all the flavours of the pesto in the process.

The eggs are being branded 'peggsto' online, and can be customised with just about anything you fancy, from spinach for extra green-ness to chilli oil for an added kick.

They're typically served on a slice of toast, and you can garnish the dish with whatever you fancy.

Amy pairs hers with avocado, ricotta, honey, and red chilli flakes, but if you're looking for extra inspiration, pine nuts, bacon or basil leaves all work wonders with this dish, too.

Hell, why not add ham to the dish and then you really will be knocking together your very own Dr Seuss tribute?!
