People Are Making Biscoff Rocky Road And We're Literally Drooling

This has *seriously* stepped up our lockdown snacking game.

During lockdown, our trusty jar of Biscoff spread has got us through a lot. We've knocked up Biscoff truffles, little speculoos flavoured mousses and even a Colin the Catterpillar with the biscuit crumbled on top.

But we've now found another incredible use for the biscuit spread: Biscoff Rocky Road.

Just take a scroll through Instagram and you'll see that the tasty treat is having a bit of a moment.

And there's no wonder the trend is catching on, because not only is it easy but also so god-damn tasty.

Speaking to Tyla, baking enthusiast Maxine, who runs Cheshire based food blog @Maxinekcakes, said: "Biscoff is everywhere you look on social media at the moment and I thought I would give it a try myself.

"My family love my new found love for baking as they get to try everything out. This rocky road went down a treat. I enjoy experimenting and trying new recipes and this one was a thumbs up."

To make her rocky roads, Maxine used white chocolate, Biscoff spread, Biscoff biscuits, marshmallows and butter.

She's given us an exclusive preview of her recipe if you want to try it out for yourself:

Ingredients

400g White Chocolate
50g Unsalted Butter
150g Biscoff Spread
250g Lotus Biscoff Biscuits
150 g Mini Marshmallows

Method
1. Line a tin with a layer of butter or parchment paper.
2. In a mixing bowl add the chocolate and butter and melt in the microwave on short bursts until fully melted.
3. In a a separate bowl melt the Biscoff Spread in the microwave for 30 seconds or until runny and then add to the melted white chocolate and mix.
4. Add in the marshmallows and chopped Biscoff biscuits and mix together.
5. Pour into the tin and spread it out evenly. Add melted Biscoff spread or biscuits on top for extra decoration. Refrigerate until set (usually a couple of hours).

Maxine isn't the only one upping her lockdown snack game with Biscoff rocky road.

Victoria, who runs Kent based business Bon Bon Cakes, is another baker who has been trying her hand at the delicacy since lockdown begun.

She told us: "I wanted to make a rocky road that just included 'the good stuff' - no fruit!

"So after playing around with different combinations the Biscoff Rocky Road Slab was born."

An even naughtier Rocky Road?! Now that we can get down with.

Foodie couple Amy and Jordan made the Biscoff-inspired creation too, but opted to use Aldi's budget version of the speculoos spread.

And they said it was still equally delicious (after looking at the picture we have no doubts!).

Meanwhile Geordie foodie Ashlie made her own version of the tasty snack, but added Toblerone as well. Mmmmm.

We know what we'll be living off for the rest of lockdown...
