Talking to Zoe Ball on her Radio 2 Breakfast Show, the actress said: "I wish. No, I'm not going to be in it. I don't think, anyway."
She added: "Like everyone, I can't wait to watch the Christmas Special. I'm so proud to be have been a part of something so special."
Sheridan played Smithy's sister Rudi in the series, which was co-created by James Corden, who played Smithy, and Ruth Jones, who played Nessa. The show focused on the coming together of Gavin, played by Mathew Horne, and Stacey, played by Joanna Page.
Sheridan, who was once in a relationship with James, said she would love to do her version of the Estelle song American Boy again, saying: "I could do my rap again. I love it."
The news of the Christmas special was first announced on Twitter, with James sharing a picture of the script and teasing fans, saying: "Ruth Jones and I have been keeping this secret for a while... We're excited to share it with you. See you on Christmas Day @BBCOne #GavinandStacey".

In an interview with The Times, James said that he felt it was important to check in on the characters nearly 10 years later to see what they were up to, saying he "owed" it to them.
"Let's see what they're doing," he said in the interview. "We wanted to see if there was something there, and for a while we weren't sure. Then, once there was, my feeling was, life's too short. Fear is the absolute reason to do it.
"This sounds ridiculously deep, but none of us are promised tomorrow. We're here for a minute, so you have to try to do it all. I'd rather regret something than not do it."
Only six months to go till we can see the Christmas special, and we can't wait.
